For Macaroni Hot Pot Recipe
2 tbsp butter
1/3 cup onion rings
3/4 cup capsicum rings , cut into halves
1/2 tbsp finely chopped garlic (lehsun)
3/4 cup blanched and chopped tomatoes
1/2 tsp chilli powder
1/2 tsp sugar
1 cup baked beans
1 1/2 cups cooked macaroni
1 tsp dried oregano
2 tbsp tomato ketchup
salt to taste
1/2 cup grated processed cheese for topping

To make Macaroni Hot Pot:
- To makemacaroni hot pot recipe | kidsmacaroni tiffin box | baked macaroni with baked beans | Indian stylemacaroni hot pot |in a deep non-stick pan, add enough water to boil the macaroni in and add the oil to it.
- Now add the salt. We add the salt at this stage as it not only helps the water come to a boil faster but also gives flavor to the pasta. Generously salt the water.
- Let the water come to a rapid boil.
- Once it starts boiling, add the macaroni. We have used 3/4 cup raw macaroni for obtaining 1 1/2 cup of cooked macaroni.
- Cook on a medium flame for 10-12 minutes, while stirring occasionally. The macaroni should be cooked until they are al dente i.e. cooked to be firm to the bite and should not be mushy or sticky.
- Drain well and throw the water away.
- Refresh the macaroni under cold water. This ensures that they stop cooking. Keep aside.
- Transfer the macaroni to a clean and dry plate.
- Cover with a lid to prevent the macaroni from drying up.
- To make the Macaroni Hot pot, first heat the butter in a broad non-stick pan.
- To this, add the onion rings.
- Then add the capsicum as well.
- Mix well and sauté them on a medium flame for 2 minutes.
- Once a little translucent, remove half of the onion and capsicum rings in a plate to be used as topping and keep aside.
- Now add the chopped garlic to the pan. You can use garlic paste as well.
- Mix well and sauté for 2 minutes till the rawness from the garlic goes away.
- Add the blanched and chopped tomatoes.
- Also, add chilli powder for spice.
- Mix well and sauté for 2-3 more minutes. Add the sugar to counter the sourness of the tomatoes.
- Add the baked beans as well.
- Then, add the cooked macaroni and the oregano. It imparts a warm peppery flavour and hence enhances the taste.
- Add tomato ketchup for colour and taste.
- Finally, add salt to the Macaroni Hot pot.
- Mix gently and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally.
- Turn off the flame and transfer the mixture to a deep baking dish.
- Spread it evenly with the back of a spoon.
- Arrange the prepared onion and capsicum rings on top evenly.
- Sprinkle the cheese evenly over it. We have used processed cheese here, you can use mozzarella as well.
