Easy Chocolate Cobbler Recipe

When most of us think of cobblers, we think of the fruity, tart versions that cap off long and warm summer days. Those guys are great and they certainly have their shining moment, but this cobbler takes things in a different direction. Introducing: my Wacky Chocolate Cobbler. That’s right… chocolate cobbler. Wipe that drool from your chin, please.

This cobbler recipe is the perfect simple dessert. It has everything you need and couldn’t be easier to make. In fact, the instructions make it a great dessert to throw together with your kids. After mixing the batter (job 1) and pouring it into the baking dish (job 2), you sprinkle a sugar mixture over the top (job 3) and then add hot tap water over that (job 4). There are enough simple tasks to go around for the little ones.

That last water part may sound a little strange, but it’s a lot of fun for kiddos especially. It’s almost like they’re witnessing magic before their very eyes, as you insert this gloopy, watery-looking dish into the oven. But then you take it out and–voila!–a mouthwatering cobbler has appeared.

What is chocolate cobbler?

Chocolate cobbler originated in the South but has become a popular staple in kitchens (and bellies) around the nation. Its top is similar in consistency to a brownie, while a delectable fudge sauce coats its bottom. This is a great dish to share with loved ones at picnics, potlucks, and other gatherings!

Can chocolate cobbler be frozen, and should it be refrigerated?

Definitely! Wacky Chocolate Cobbler can keep well for up to a week in a covered container in the fridge. It can also be frozen for up to 2 to 3 months… if it lasts around your house that long!

How sweet is chocolate cobbler?

Chocolate cobbler certainly has a sweetness to it because, after all, it’s a chocolate cake dessert reminiscent of chocolate lava cake. But to me, the cocoa and vanilla flavors make it more of a rich, hearty sweet than a my-teeth-are-hurting sweet. With a little vanilla ice cream on top, you’ll be satisfied… and maybe even ready for seconds!

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 7 tablespoons cocoa powder, divided
  • 1 1/4 cup sugar, divided
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 1/2 teaspoon vanilla extract
  • 1/2 cup packed light brown sugar
  • 1 1/2 cup hot tap water
  • vanilla ice cream, for serving

Instructions

  1. Preheat oven to 350 degrees.
  2. First stir together the flour, baking powder, salt, 3 tablespoons of the cocoa, and 3/4 cup of the white sugar. Reserve the remaining cocoa and sugar.
  3. Stir in the milk, melted butter, and vanilla to the flour mixture. Mix until smooth. Pour the mixture into an ungreased 8-inch baking dish.
  4. In a separate small bowl, mix the remaining white sugar (it should be 1/2 cup), the brown sugar, and remaining 4 tablespoons of cocoa. Sprinkle this mixture evenly over the batter.
  5. Pour the hot tap water over the dry sugar mixture.
  6. DO NOT STIR!
  7. Bake for about 40 minutes, or until the center is set. Let stand for 5 minutes and then serve warm with ice cream.
