    Vegan Tofu Omelette

    \This is a protein rich vegan breakfast idea made with omelet. You will never ever find that this is made with tofu. It is so delicious and so healthy as well.

    I used cheese in the filling, if you want to make it vegan you can skip it or use dairy free cheese, The filling for this can be quite endless, you can fill it with anything you like, chicken, spinach, fresh veggies or even some sauted veggies.

    Ingredients for Vegan Tofu Omelette

    Oil or Butter for making pancakes

    For Grinding:
    • Tofu - 100 grams
    • Salt to taste
    • Turmeric Powder / Manjal Podi - ½ tsp
    • Milk or Unsweetened soy milk - ½ cup or as needed
    • Besan / Gram Flour / Kadalai Mavu - ½ cup to ¾ cup
    For Filling:
    • Olive Oil - 1 tsp
    • Garlic - 2 cloves chopped finely
    • Onions - 1 medium size sliced thinly
    • Capsicum / Bell Peppers - ¼ sliced thinly
    • Red Chilli Flakes to taste
    • Salt to taste
    • Oregano - ½ tsp
    • Coriander Leaves - 3 tblspn finely chopped
    • Cheese as needed grated (optional) (use dairy free cheese)

    How to make Eggless Omelette

    1. Take grinding ingredients in a blender and make it into a fine puree. Set aside.
    2. Now heat little oil in a pan, add garlic and saute for a min. Add in onions, bell peppers and saute for few mins.
    3. Now add in salt, oregano, chilli flakes and mix well.Add coriander leaves and mix well. set aside. filling done.
    4. Now pour the batter in a nonstick greased pan and cook for few mins on one side, flip over and cook for few more mins on other side as well till crispy.
    5. Now flip over and spoon some filling on one side, top with cheese, fold the omelete.
    6. Cover and let the cheese melt.
    7. Serve

    Ingredients

    • Oil or Butter for making pancakes
    • For Grinding:
    • 100 grams Tofu
    • Salt to taste
    • ½ tsp Turmeric Powder / Manjal Podi
    • ½ cup or as needed Milk or Unsweetened soy milk
    • ½ cup to ¾ cup Besan / Gram Flour / Kadalai Mavu
    • For Filling:
    • 1 tsp Olive Oil
    • 2 cloves Garlic chopped finely
    • 1 medium Onions sliced thinly
    • ¼ Capsicum / Bell Peppers sliced thinly
    • Red Chilli Flakes to taste
    • Salt to taste
    • ½ tsp Oregano
    • 3 tbsp Coriander Leaves finely chopped
    • Cheese as needed grated optional (use dairy free cheese)

      I made this today.ilwas very tasty but I used paneer instead of tofu and it was very soft.broke into pieces while transferring from tawa to the plate.
