We’re taking the 15 Minute Meal series to the land of breakfast because we all know how insane mornings can be. Whether you’re trying to get your kids to school, maybe you want to work out in the morning or you just start working really early. Whatever it is, doesn’t matter. What is important is that you start your day off right with a nice homemade meal and that’s what we’re covering in today’s video. My top four breakfast options that are all super delicious, very customizable but most importantly, they all come together in under 15 minutes! Banana Pancakes

Ingredients:

  • 3 medium bananas

  • 3 eggs

  • 1/4 cup of oat flour

  • 1 teaspoon of baking powder

  • Coconut oil for frying

  • Maple syrup, optional

Instructions:

  1. In a bowl, add in the bananas and mash them until it looks like baby food.

  2. Then add in the eggs and beat until they combine with the bananas.

  3. Add in the oat flour and baking powder. Whisk until you have a pancake batter consistency. Add more oat flour if necessary.

  4. In a non stick skillet on medium low heat, add in a glob of coconut oil and let that melt.

  5. Spoon in about 2 tablespoons worth of batter per each pancake. Drop in some blueberries and let it get golden brown before flipping.

  6. Repeat until all the batter is finished. Serve warm with maple syrup.

Breakfast Hash

Ingredients:

  • 3 slices of thick cut bacon, cut in half

  • 2 potatoes, cleaned & shredded

  • Pinch of salt

  • 3 – 4 eggs

  • Splash of vinegar

Instructions:

  1. Bring a pot of water to a boil. In a cold pan, add in your bacon and let the fat render out.

  2. In the meantime, combine your potatoes and salt. Clean up the kitchen and then come back to the potatoes. Grab a clean towel and squeeze out all the water.

  3. Pour some of the bacon fat into a bowl but leave about 2-3 tablespoons of fat in the pan.

  4. Then using a mason jar lid or a circle cookie cutter add in the shredded potatoes to shape them into circles.

  5. Flip once golden brown and add more fat if necessary. Let the other side get golden brown. Remove from the pan.

  6. To your pot of boiling water, add in a spoonful of vinegar and start poaching your eggs. Click here to see how I did it!

  7. Finally, top your hash brown with some crumbled bacon, your poached egg, and some sauerkraut if you have!

Flavor Bomb Oats

Ingredients:

Instructions:

  1. To a pot, add in the oats, almond milk, orange zest, orange juice, grated ginger, grated nutmeg, and salt. Mix it up and set the flame to medium low. Let that cook and thicken while you prep your toppings.

  2. Chop the almonds, cut up your figs and kiwis, and wash your blueberries.

  3. Once the oatmeal is nice and thick, add in a touch of maple syrup to taste. Pour into a bowl and top with all your toppings. Enjoy while warm!

Veggie Frittata

Ingredients:

  • 2 -3 tablespoons of olive oil

  • 1 onion

  • 1 red pepper

  • 8 – 10 Bella mushrooms

  • salt & pepper, to taste

  • 5 – 6 eggs

  • 1/4 cup of milk

  • parsley

  • cheddar cheese

Instructions:

  1. Choose any pan that is about 6- 8 inches in diameter and 2 inches deep. Set the flame to medium low and pour in the oil.

  2. Next, start prepping your ingredients by slicing up your onion, pepper, and mushrooms

  3. Add the veggies to the pan and let them soften and caramelize slightly. Sprinkle in some salt and pepper.

  4. In the meantime, mix together your eggs and milk. You know your eggs are ready to go when some bubbles come to the top. It means that they have some air and are going to be light and fluffy when cooked.

  5. Once your veggies have softened, check the amount of fat. Make sure there is enough fat to completely coat the bottom.

  6. Add in your scrambled eggs and and mix in with the veggies.

  7. While the eggs are browning on the bottom, roughly chop up some parsley and grate some cheddar over top.

  8. Check the bottom of your pan… if you used the right amount of oil your frittata should be nice and golden brown on the bottom. If it’s not browning, add in more oil and make sure the heat is at medium.

  9. Once browned, stick it into the broiler for about 2-3 minutes to cook the top of the frittata. Let the frittata cool for about 5 minutes before cutting into pieces. Serve while nice and hot!
