There are many similarities in meals from different cuisines. Like these Tikkis and Chole. Tikkis are cutlets or patties usually made with potatoes, veggies, with onions, chili, spices and such. Served with Chole – Chickpea curry.
They sound like Crispy Potato Croquettes with a bean based sauce, dont they :).

My Dad prefers flavors that he knows. Some years back, it was next to impossible to get him to try something outside Indian food. He has since become just a bit more adventurous. So when Mom said we make some Aloo Tikki for early dinner, I suggested we add Quinoa to it. Mom was like, yes, add anything to the patty within certain limits, he wont know:). We kept the rest of the Tikki exactly like mom always makes it. You can use any of the spices you have or just add garam masala/curry powder or other spice blends instead of individual spices.
The patties can be easily made gluten-free by omitting the bread slice or substituting it with ground Oats.
Serve the patties as is, with sauce of choice like ketchup, Sriracha or BBQ.
Or with some hot chickpea curry, chopped onion and cilantro. You can also make burgers with the patties. Serve topped with sliced onion, tomato, greens, cilantro chutney, tamarind chutney or other sauces of choice.It was difficult taking pictures with the aroma of fresh hot Tikkis and Chole in the entire house.

Steps:
Mash the potatoes. Add cooked Quinoa, onion, chili, ginger, cilantro, spices and crushed bread slice.
Mix well and shape into patties. Pan roast with a little oil until golden on both sides.
Serve hot with Chickpea curry, topped with chopped onion and cilantro. Or top with BBQ sauce.

Ingredients
Potato Quinoa Patties/Tikki: Makes 11-12 patties
- 3 medium potatoes boiled and mashed
- 1 cups (185 g) cooked Quinoa
- 1/3 (0.33) medium onion red or white finely chopped
- 1 green chili finely chopped
- 1/2 cup (8 g) chopped cilantro
- 1 Tablespoon chopped ginger
- 1/2 teaspoon (0.5 teaspoon) carom seeds Ajwain, or use cumin
- 1/2 teaspoon (0.5 teaspoon) red chili powder
- 1 teaspoon coriander powder
- 1/4 teaspoon (0.25 teaspoon) kala namak black salt
- 3/4 teaspoon (0.75 teaspoon) salt or to taste
- 1 slice of stale bread crumbled (omit to make gluten-free or use coarsely ground Oats)
Toppings:
- 1 Recipe chickpea curry or Sweet and Sour Chickpeas
- Chopped Onion
- Chopped Cilantro
For Variations:
- Top with Tamarind Date Chutney or BBQ sauce
- Top with chopped cucumber
- Use spice blends like garam masala, berbere, cajun spice in the patties
Instructions
In a large bowl, mash the potatoes well.
Add the rest of the ingredients, mix well.
Shape into patties and pan fry them with a little oil on medium heat until both sides are golden and crisp.
Patties can be served as is with sauce of choice like ketchup, Sriracha or BBQ.
To serve Tikki chole, ladle some chickpea curry below or on top of the patties.
Top them with chopped onion and cilantro.
For variation, top with Tamarind date chutney or a little Barbecue sauce.
Notes
The patties can also be baked at 400 degrees F for 15-20 minutes. I like them crisped up on the pan much better and they need just a few teaspoons of oil on a good pan.
You can also use wheat flour or chickpea flour instead of bread to help balance the moisture in the patty mixture. Mash and mix the ingredients well and make tight patties so they dont break while flipping.
You can use Sweet Potatoes instead of potatoes. The patties will need bread crumbs to balance the extra moisture and will need to be baked, if using sweet potatoes.

I did just that! I also used oats in place of the bread to make it GF. I added a half a jalapeno. I baked them for 40 minutes turning them twice. They came out crispy and delicious. Everyone liked them. It’s another winner Richa!Reply

Hey Richa , thanks a lot for this recipe , it was a bit challenging and fun as well while I prepared the patties , they would break in the beginning as I took them off the oil pan a bit early before they even turned golden brown in colour . Then once I got the right technique It came out well . So we had an office party where each of us had to get food , so I tried following the recipe and it came out very well . All my colleagues loved it . We sometimes order food online from this Asian restaurant called 48 East , where I had tried a vast variety of food . So as I get time only on weekends and have a passion for cooking I try out new recipes every weekend .Reply

Turned out really nice- I altered it though. I blended the chole masala before adding the chickpeas because I wasn’t getting the smooth chole consistency. The onion and tomatoes still seemed too big. Worked out great though. Reminded me of Delhi street food <3

I have made these quinoa patties twice now and love them. The whole family is happy to eat them! The second time I replaced a few of the white potatoes with a large sweet potato and liked that a little better. I like the patties on their own but really love them paired with the chana masala. about 3 cups of mashed potatoes. a half cup less or more will not make much of a difference.

yes. shape them an freeze between parchment in a ziplock or airtight container. thaw, bake and serve. the chickpea curry freezes well too.

This is an awesome recipe, Richa! I tried making these patties yesterday (baked them in the oven) but, mine broke even while I was making the patties. Did you add any water to the mix while molding them into shape?

no i didnt use any water. my potatoes were very well cooked, so they become like mashed potatoes and dont need much help binding. you can use a bit of water, or use more potato to help with the binding.

looks good richa!.. When I tried doing this, mine tends to break while flipping… It was very soft, so I couldn’t flip without breaking… I skipped bread… was it really needed?

It depends on the moisture content in the mixture. If it is too soft and moist, then you need the added bread, else it works fine. You can also add flour like wheat or chickpea flour to redue the moisture content. Mash and mix well and make tight patties so they dont break.
