The Kentucky Derby is an American tradition and the perfect chance to enjoy a mint julep and slice of yummy pie! Whether you’re headed to the derby itself, enjoying theIroquois Steeplechase in Nashville, TN or hosting a viewing party – these recipes will have your guests ooh’ing and aah’ing! Enjoy!

Joe’s Mint Juleps

2 cups water
2 cups sugar
20 sprigs of mint
extra mint to garnish the drinks
Heat the water to boiling, add the sugar, and stir until dissolved. Place the mint in a glass container or jug. Pour the hot syrup mixture over the mint and let it set in a glass container or jug for 24 hours. Strain to remove the mint and refrigerate the “Julep Syrup”. Keep in the refrigerator and use as needed. Serve the same amount of “Julep Syrup” to same amount of bourbon over fine ice. Pour 2-ounces of bourbon to 2-ounces “julep syrup” for a nice drink size. This is truly a sipping drink. Serving refreshing mint juleps is a staple of Southern entertaining and a must on Kentucky Derby Day. Be sure to speak in a slow Southern drawl when serving Mint Juleps!

Spicy co*cktail Sausages

2 pounds hot sausage
1/2 cup ketchup
1/2 cup wine vinegar
1/2 cup brown sugar
1 tablespoon soy sauce
1/2 teaspoon ground ginger
Toothpicks
Form the sausage into 1 1/2-inch balls and cook in frying pan. Drain and marinate overnight in the sauce made by mixing the remaining ingredients. Heat the sausages in the oven or microwave just before serving. Yields: 48 sausages

Chocolate Chip Pie

Note – this is not the original Derby Pie recipe trademarked by the Kerns or intended to be so.This, however, is a delightful pie that my family has loved for years both around the horses races and for holidays like Thanksgiving and Christmas. We add in semi-sweet chocolate chips but even peanut butter or butterscotch chips are good too! We think it’s the best.

Recipe for 9″ Single Crust Pie Crust
1/2 cup (1 stick) butter, melted
1/4 cup white sugar
3/4 cup brown sugar, packed
2/3 cup Karo light corn syrup
4 large eggs, room temperature
2 teaspoons vanilla extract
1/4 cup bourbon (your favorite brand)
3/4 cup Ghiradelli semi-sweet chocolate chips
1 1/4 cup chopped pecans or walnuts
In a large mixing bowl, fitted with attachment, mix together butter, sugars, corn syrup, eggs vanilla, and bourbon until whipped. Fold in chocolate chips and nuts. Blend well. Pour into pie crust and bake for 50-60 minutes at 350 degrees (or until set).

Churchill Downs Benedictine Spread

4 ounces cream cheese
4 ounces goat cheese
4 tablespoons diced cucumbers
4 tablespoons chopped fresh scallions
2 tablespoons chopped fresh dill
Crackers ofbaguetterounds for serving
Combine first 4 ingredients in processor. Blend until just smooth. Add dill. Season spread with salt and pepper. Transfer to small bowl. Makes about 2 cups.

Kentucky Chocolate Billionaires

1 package (14-ounce) caramels
3 tablespoons water
1 1/2 cups chopped pecans
1 cup crisp rice cereal
3 cups milk chocolate chips
1 1/2 teaspoons shortening
Line two baking sheets with waxed paper; grease the paper and set aside. In a large heavy saucepan, combine the caramels and water; cook and stir over the low heat until smooth. Stir in the pecans and cereal until coated. Drop by teaspoonfuls onto a prepared pan. Refrigerate for 10 minutes or until firm. Meanwhile, melt chocolate chips and shortening, stir until smooth. Dip candy into chocolate, coating all sides; place on prepared pans. Refrigerate until set. Store in an airtight container. Recipe (Taste of Home.com)
