Extra soft and chewy flapjacks

Now, I know that those of you reading this from across the pond will say “Hang on! Flapjacks are pancakes! What’s this oatmeal flapjack thing?”. I get you. Honestly, I do. The UK and North America (NA) have many similar phrases or words for different things. For example, the UK has trainers where NA have sneakers. NA has pants where pants in the UK are underwear. And so on. In fact, many are quite funny. Try this link and I bet you’ll laugh out loud at a few…

Either way, this FLAPJACK recipe ???? is delicious and I highly recommend you give it a go. Let’s make some…

1. Gather the ingredients together

As I said, 4 ingredients only. Oats, butter, light brown sugar, and syrup. Easy…

Gather the ingredients together

The ingredient measurements are listed in the printable recipe below and make 9 good sized flapjacks. If you need more, or less just scale up or down as required.

2. Make the extra soft and chewy flapjack mixture

The first thing to do when making the extra soft and chewy flapjack mixture is to soften the butter. Room temperature will work but I always melt the butter in a microwave or over a stove. While doing this also turn the oven on to preheat at 200C / 180C Fan / 400F.

With the butter melted add all ingredients to a bowl or food processor.

Add the ingredients to a blender

If using a food processor then use the pulse blend function. The ingredients only need to be mixed together and not smashed up. A bowl and stirring spoon will also work just as well.

Form the flapjack mixture

3. Form the extra soft and chewy flapjacks

Once the mixture is made grease a 20cm by 20cm, or equivalent baking tray.

Grease the baking tray

Now, tip the flapjack mixture into the tray.

Tip the flapjack mixture into a baking tray

Using a spoon, spread the mixture such that it covers the whole tray and press down all over.

Flatten the flapjack mixture

4. Bake the flapjack and serve

Finally, place the baking tray in the preheated oven and bake for 20 minutes. Once baked the top will go a slightly darker golden color.

Leave the flapjack to cool for around 10 minutes and then tip out of the tray and cut into whatever size portions you like. I cut mine into 9 but you can easily make many bite-size pieces to nibble on whenever you fancy.

And that’s all there is to it foodie folks! Delicious extra soft and chewy flapjacks. A great grab and go breakfast bar or just a cheeky snack when you fancy a nibble. Very easy to make and a great way to introduce the kids to the kitchen. Yum!

These flapjacks are deeeeelicious! So easy to make and they smell heavenly while baking! I added a little bit of maple extract to the melted butter and maple syrup just to enhance the maple flavour! Steve you are right! I will share some flapjacks with my neighbour, but these goodies will be gone by midnight! Thanks for sharing a nice recipe!

I have made these several times and the result is never chewy. The result is much more like granola. The recipes I see online are all very much the same with butter, brown sugar, golden syrup or maple syrup, and oats. Why do mine so consistently come out dry?

Hi Terry, I’ll be honest and say that these should be soft and chewy. Maybe try adding more syrup. Sometimes a tablespoon can mean different things to different people and syrup is difficult to measure this way. Also, don’t bake for too long. The edges only just need to start browning. Regards, Steve.
